This recipe happened because I got lazy. I had thawed out a beef roast to make another recipe, but when it came time to make it, I didn’t want to. The meat was already thawed and needed to be cooked, so I looked around my kitchen and had a light bulb moment! What would happen if I just dumped some sauce on it and put it in the crockpot? Well, magic happened, that’s what and Amy’s Lazy BBQ Beef was born.
Lets start with the beef-it was almost 4 pounds with bone-in. I put it in the crockpot first.
Then I poured a whole jar of Tessemae’s Matty’s BBQ sauce over the beef. If you haven’t used their sauces and dressings, I urge you to try them. Most can be found at Whole Foods, be I order mine online. They have a quick shipping policy and I get my stuff in just a couple of days.
I set the slow cooker to cook on low for 10 hours. You could do 8, but I was gone the whole day so needed the time. When it’s done, let it rest for about 20 minutes and then shred. I bought these meat claws from Amazon a few months ago and LOVE them! They’re only about $12 and totally worth your investment! I shredded all the meat in just 1 minute!
Once the beef is shredded, serve it. My family used buns and made BBQ Beef sandwiches, but I just had mine plain. I made sweet potatoes to go along with it and it was the most delicious meal ever. My family kept asking me how I made it and there was very little of the 4 pounds of beef left after dinner.
- 3-4 pounds beef roast
- 1 jar Tessamaes Mattys BBQ Sauce
- Place beef in slow cooker
- Pour entire jar of sauce over the beef
- Cook on low for 8-10 hours
- Shred and serve
